3 recipes for the gourmet market research

The main source of income for a restaurant is to limit the ingredients waste. In a market research the main ingredient is the sample, the interviewees. To cook a traditional market research we need:

  • chef (researcher)

  • pot/pan/oven (methodology)

  • primary ingredient (sample)

  • recipe (questionnaire)

Searching for fresh ingredients, on one hand it makes the difference, but on the other hand it’s the main reason for time waste and cost increase. In order to quickly find an interviewee, most institutes uses Panels. But panellist often are not “fresh ingredients” and they participate to surveys only to get a reward. The only way to get fresh ingredients, and ensuring a gourmet quality, is not going to the market every day looking for ingredients but profiling the right audience on the social media and attract it: the ingredients themselves will come fresh directly to the researcher chef’s kitchen. Ennio Armato and Alessandro Imborgia will present, during their speech, four gourmet dishes, four study cases to prove that is possible to cook haute cuisine with lower costs than a fast food.
